    A lovely blend of cinnamon and coffee. A coffee and cinnamon cake with coffee icing topped with cinnamon.

    Makes: 1 (18cm) round cake

    • 140g (5 oz) unsalted butter, softened
    • 140g (5 oz) caster-sugar
    • 3 medium eggs
    • 140g (5 oz) self-rasing flour
    • 2 teaspoons instant coffee granules
    • a little hot water
    • 1/4 teaspoon ground cinnamon
    • for the icing
    • 2 teaspoons instant coffee granules
    • 140g (5 oz) icing sugar
    • a little hot water
    • 100g (3 1/2 oz) unsalted butter, softened
    • gound cinnamon, for dusting

    1. Pre-heat oven at 180 C / Gas 4. Grease two 18cm (7 in) round cake tins. Line bottoms with baking parchment.
    2. Beat the butter until light and creamy. Slowly add the sugar and beat till fluffy.
    3. In a separate bowl, whisk the eggs. Add the egg to the butter mixture whilst beating. Then sift in the flour. Beat till well combined.
    4. Dissolve the coffee granules in a little hot water to make a thin paste. Pour it into the butter mixture then mix well to incorporate. Finally, add the cinnamon and mix. Divide equally between the two prepared tins.
    5. Bake for 20 to 30 minutes in the preheated oven, until risen. (Check with a cocktail stick if it's done.) Allow to cool a little in their tins.
    6. Prepare the icing: in a bowl, beat the butter until light and creamy. Slowly add in the icing sugar. Mix the coffee granules with the water, then add to the icing mixture. Mix until well blended.
    7. Remove the cake from the cake tins. Spread the icing on top of one of the cakes then place the other on top like a sandwich. Add the remaining icing over the cake, then sprinkle on some cinnamon.

    Coffee lovers this ones for you . I used a slightly bigger tin and baked the cake as one and cut it in half and sandwich it together again. Beautiful, rich , mosit sponge with a balance of flavours. I added half the coffee grangules suggested to the icing as i didn't want it to be to strong in flavour. Whole family enojed this cake.
