Spicy sausage pasta

    A recipe for a quick and simple midweek meal with smoked sausage. It is also great for parties as it is good hot or cold.

    Serves: 4 

    • 1 small bag fusilli or penne pasta
    • 1 large jar puttanesca pasta sauce
    • 1 Mattessons® Smoked Pork Sausage, cut into slices
    • 1 small pack unsmoked bacon lardons
    • 1 small red onion, chopped
    • 1/2 yellow pepper, chopped
    • 3 or 4 cloves garlic, chopped
    • salt and black pepper to taste
    • 1 dash Worcestershire sauce
    • chopped fresh basil to serve

    1. Boil up pasta according to packet.
    2. Gently warm the puttanesca sauce in a pan.
    3. Fry off the sausage, lardons, onion, pepper, garlic in a pan till veg is soft. Add to the warmed pasta sauce, then season with salt, pepper and Worcester sauce.
    4. Drain the pasta and toss with the sauce. Serve each portion garnished with fresh basil. Also serve with cracked black pepper and plenty of garlic bread if you wish.
