Peppercorn sauce

    Super peppercorn sauce ideal for steaks. You can choose to use milk or cream depending on how rich you'd like the end result to be.

    Serves: 6 

    • 2 tablespoons whole black peppercorns
    • 55g (2 oz) butter
    • 2 tablespoons plain flour
    • 2 tablespoons brandy
    • 300ml (1/2 pt) stock
    • 150ml (1/4 pt) milk or cream

    1. Put peppercorns in a bag and crack them with rolling pin (or quickly put in blender).
    2. Gently melt the butter in a saucepan. Add brandy and flour and whisk to paste, adding stock as you go along. Add cracked peppercorns, stir and leave to heat through. Finally, add milk or cream (or water) until you reach your desired consistency.

    really quick and tasty . i made mine with creme fraiche instead of milk or cream and added a tad more pepper.  -  30 Aug 2013


    Quick and easy, I'll be using this again. Didn't have brandy so I used Jack Daniels instead.  -  28 Mar 2015


    Loved it. Really easy and surprised myself.. Just make sure you have a drop of brandy in though. I think that's the only ingredients most people won't have.  -  04 Oct 2014
