Put peppercorns in a bag and crack them with rolling pin (or quickly put in blender).
Gently melt the butter in a saucepan. Add brandy and flour and whisk to paste, adding stock as you go along. Add cracked peppercorns, stir and leave to heat through. Finally, add milk or cream (or water) until you reach your desired consistency.
