    About this recipe: Tasty onion soup for when you have lots of onions to use up in the winter. You can use any combination of yellow, white and brown onions.

    Ingredients
    Serves: 8 

    • 1 tablespoon butter
    • 5 to 6 large onions, peeled and sliced
    • 4 beef OXO® stock cubes
    • 1 teaspoon ground white pepper
    • 2L boiling water
    • 1 tablespoon cornflour

    Method

    1. In a large pan add the butter and onions and cook until onions have softened, stirring occasionally, around 10 minutes.
    2. Crumble in the beef stock cubes, season with white pepper and add boiling water. Turn the heat right down to a low simmer and cook for 3 to 4 hours.
    3. Mix cornflour with a little bit of cold water. Add to the pan and mix well. Simmer till thickened and serve.

    Tip

    This is a very easy simple soup that I serve with Welsh rarebit.

    Make it in your slow cooker

    This soup is easy to make in your slow cooker. Simply transfer the softened onions to your slow cooker and add the remaining ingredients as stated. Cook on a low setting for 3 to 4 hours.
