Banana, chocolate chip and fudge cupcakes

    Delicious banana cupcakes that the whole family will enjoy! If you don't have fudge chunks, you can use extra chocolate chips or chopped chocolate instead.

    Makes: 16 to 24 cupcakes

    • 225g plain flour
    • 110g caster sugar
    • 1/4 teaspoon salt
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 110g butter
    • 1 teaspoon vanilla extract
    • 2 large bananas, mashed
    • 4 tablespoons milk or buttermilk
    • 2 eggs
    • 70g fudge chunks
    • 70g chocolate chips

    1. Preheat your oven to 190 C / Gas 5. Grease or line a muffin tin.
    2. Sift the plain flour, caster sugar, salt, baking powder and bicarbonate of soda together in to a large bowl. Set aside.
    3. Put the butter and the vanilla extract into a small separate bowl and mix together until creamy. Add the eggs and the mashed bananas and mix well.
    4. Add the creamy mixture into the dry mixture and add a bit of milk each time you mix. When well combined, add the fudge chunks and the chocolate chips. Spoon into the prepared tin, filling each case half full.
    5. Bake in the preheated oven until risen and a skewer inserted in the centre of a cupcake comes out clean, about 15 to 20 minutes,.
    6. Remove from oven and let cool in the tin for 10 minutes before serving.
