My famous BBQ sauce

    I invented this one day for an impromptu BBQ and it was an instant hit - I've been asked to make it again and again! It's so moreish, easy and quick to make, and can be made in advance so you can get on with other things. This recipe makes half a pint, but can easily be doubled.

    Ingredients
    Makes: 300 ml BBQ sauce

    • 2 tablespoons olive oil
    • 1 small onion, chopped
    • 3 cloves garlic, crushed
    • 1 teaspoon fennel seeds, crushed
    • 1 teaspoon 'lazy' chillies from a jar (optional)
    • 55g (2 oz) dark brown sugar
    • 50ml (1 3/4 fl oz) soy sauce
    • 300ml (10 fl oz) tomato ketchup

    Method
    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Soften the onion and garlic in the olive oil, with the fennel seeds, chilli (if using) and sugar until the sugar has melted and started to caramelise.
    2. Add the soy sauce and tomato ketchup, bring to the boil, lower the heat and allow to simmer for 10 minutes, stirring occasionally to avoid sticking.
    3. Use as you will - it will keep in the fridge in a covered bowl for a week, easily - if there's any left!
