About this recipe: When plain scrambled eggs aren't enough, and a full English breakfast is too much! Smoked salmon and scrambled eggs is the perfect breakfast when you want something easy to get you set up for a good day but like it a little fancy. Great with chilled orange juice, even better when the orange juice contains some Champagne! Perfect for Mother's Day and Father's Day!

Serves: 1 

  • 2 slices bread
  • 2 tablespoons butter
  • 2 large eggs, beaten
  • 2 slices smoked salmon
  • salt and pepper, to taste
  • 1 sprig parsley

  1. Toast the bread and spread with 1 tablespoon butter. Transfer to a warm serving plate.
  2. In a frying pan on a medium heat, melt the remainder of the butter then add the eggs. Cook and stir the eggs to desired doneness.
  3. Top the toasted bread with the scrambled eggs and then the sliced smoked salmon. Season with salt and pepper and garnish with a sprig of parsley. Serve immediately.
