12 plum tomatoes, halved and deseeded
olive oil, to taste
6 cloves garlic, crushed
salt and pepper, to taste
250g buffalo mozzarella cheese, chopped
chopped fresh basil, to taste
6 handfuls rocket leaves

Preheat the oven to 120 C / Gas 1/2. Grease a baking tray.
Place the tomatoes on the baking tray and drizzle with olive oil and sprinkle with crushed garlic. Season.
Bake in the preheated oven for 20 to 25 minutes until the tomatoes are semi-dried.
Remove the tomatoes from the oven and stuff with buffalo mozzarella cheese and chopped basil leaves.
Bake the stuffed tomatoes in the oven for a few minutes until the mozzarella cheese begins to turn golden brown.
Serve three tomato halves per person with a handful of fresh rocket leaves immediately.
To make this dish suitable for vegetarian diets, substitute the buffalo mozzarella cheese for vegetarian mozzarella cheese.
