Delicious Lemon Ice Cream without an ice cream machine!

    This is the recipe for a creamy lemon ice cream that really does melt in your mouth! No ice cream machine is needed.

    Serves: 8 

    • 4 egg whites
    • 2 egg yolks
    • 450 ml cream
    • 100 g castor sugar
    • juice of 2-3 lemons
    • rind of 1 lemon

    1. Whip the cream until stiff peaks occur.
    2. Whip the 4 egg whites very stiffly. A good way to check that they are done is that when you turn the bowl sideways the egg whites shouldn't move.
    3. Add the castor sugar to the whipped cream and stir in the 2 egg yolks.
    4. fold the cream mixture into the egg whites. Do this very carefully.
    5. Add the Lemon juice and rind. Mix it into the mixture.
    6. Freeze the mixture overnight. It should be taken out and mixed around about 5 hours into its freezing process. Serve the next day.


    Note: This recipe can also be made with other flavours (Coffee, Chocolate, Crunchie, etc.)
