Sweet potato, ginger and honey soup

    Delicious, sweet and so easy to make. This is a vegan sweet potato soup flavoured with fiery ginger and sweetened with honey to taste.

    Serves: 6 

    • drizzle of oil
    • 1 onion, chopped
    • 1 large chunk ginger, sliced
    • 2 large sweet potatoes, peeled and chopped
    • 1 large carrot or a few smaller ones, chopped
    • 2 vegetable stock cubes
    • 1.5L water
    • 3 tablespoons honey
    • salt and black pepper to taste

    1. In a large saucepan, fry the onions and ginger in a little oil for a couple of minutes. Add the sweet potato and carrot and fry for a few more minutes.
    2. Add the stock cubes dissolved in the water and simmer for 20 minutes or until the carrots and sweet potato are soft.
    3. Blitz with a blender until you reach desired consistency.
    4. Add the honey and season to taste.
