Chicken and cucumber soup

    This delightful chicken and cucumber soup is perfect for a light lunch or as a starter for a relaxed family meal. Enjoy with some fresh crusty bread.

    Serves: 4 

    • 110g cooked chicken, finely chopped
    • 300ml milk
    • 450ml chicken stock
    • 150ml dry white wine
    • salt and pepper, to taste
    • 1 cucumber, peeled and chopped
    • 1 tablespoon cornflour
    • 2 tablespoons water
    • 2 teaspoons double cream
    • chopped fresh parsely, to garnish

    1. In a saucepan over a medium heat, combine the chicken, milk, stock and wine and stir occasionally for 15 minutes. Season well then add the cucumber and cook for a further 5 minutes.
    2. Mix the cornflour together with the water then pour into the soup, and stir over a low heat until the soup thickens.
    3. To serve, remove from the heat and stir in the cream. Ladle into 4 soup bowls then garnish each with chopped parsley. Serve immediately.
