About this recipe: Bake these red velvet cupcakes for Valentine's Day or any special occasion. I used 1 tablespoon food colouring, but for a deeper colour add another 1 or 2 tablespoons.

Makes: 12 cupcakes

  • 150g plain flour
  • 3 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 150g caster sugar
  • 60g unsalted butter, softened
  • 1 tablespoon vegetable oil
  • 1 egg, lightly whisked
  • 1/2 tablespoon pure vanilla extract
  • 175ml buttermilk
  • 1 to 3 tablespoons good quality red food colouring
  • 1/2 tablespoon distilled white vinegar

  1. Preheat your oven to 180 C / Gas 4. Line a muffin tray with paper cases.
  2. Sift the plain flour, cocoa and baking powder into a large bowl. Whisk the sugar, butter and oil in another bowl until light and creamy. Mix in the beaten egg and vanilla.
  3. In a glass or jug, add red food colouring to the buttermilk. Mix well with a fork until even in colour.
  4. Gradually add the egg mixture and buttermilk, alternately, into the dry flour mixture. Continue until it is evenly mixed. Finally, add the vinegar and give it one final stir. Spoon into the paper cases.
  5. Bake for 35 minutes, then remove from oven and cool on a baking tray for 30 minutes. Then decorate them with a cream cheese icing.
