Fresh beetroot salad

    Enjoy raw beets when they are young and succulent. This tasty and vibrant salad is perfect as a small starter or as a side dish to a larger meal.

    Serves: 8 

    • For the salad
    • 6 medium raw beetroot, grated
    • 1 red onion, grated
    • For the dressing
    • 3 tablespoons olive oil
    • 3 tablespoons lemon juice
    • 1 tablespoon wholegrain mustard
    • 2 tablespoons chopped fresh coriander
    • 2 tablespoons capers

      For the salad:

    1. In a bowl combine the beetroot and the onion. Transfer to a serving bowl.
    2. For the dressing:

    3. In a jar, combine all of the dressing ingredients. Cover then shake vigorously.
    4. Pour the dressing over the beetroot and onion, toss and serve.
