Don't feel limited to using button mushrooms, this recipe works fantastically well for a whole variety of mushrooms should you be experienced in foraging for your own.
2 tablespoons butter
1 clove garlic, crushed
350g button mushrooms, halved
1 onion, chopped
110g smoked ham, cut into strips
150ml red wine
salt and pepper, to taste
2 teaspoons chopped fresh parsley

In a frying pan over a medium heat, melt the butter and add the garlic, followed by the mushrooms. Cook and stir for 8 minutes until the mushrooms begin to turn golden. Add the onion and continue to cook for 5 more minutes until the onion softens.
Add the ham, red wine and seasoning to the saucepan and bring to the boil for 30 seconds. Remove from the heat and allow to marinate for 30 minutes.
Preheat the oven to 220 C / Gas 7.
Divide the mushrooms between 4 individual ramekins.
Bake in the preheated oven for 10 minutes. Remove, top with fresh parsley and serve immediately.
