About this recipe: If you are lucky enough to have a quince tree in your garden, or a friend who does, then this recipe is for you. This flavourful and easy to make quince vodka is an innovate way to enjoy this underrated fruit throughout the year. In ancient Greece the quince was believed to be a fruit of love and fertility and was often given to a bride on her wedding day. Like many good things, you will need to be very patient, as this vodka needs at least 6 months to mature and will only improve with age, so plan ahead. Drink neat and frozen with someone special.


Makes: 1 litre vodka

  • 1.5 litres vodka
  • 225g caster sugar
  • 1kg quinces - peeled, cored and chopped

  1. Combine all of the ingredients and divide between sterilised Kilner® jars. Leave for six months.
  2. After the initial maturing phase, strain the quince vodka and pour into sterilised bottles. Allow to age further.
  3. To serve, drink neat, frozen.
