Vegan apple cake

    A vegan apple cake that's dairy, egg and nut free. This moist apple cake is a good way to use up leftover apples or other seasonal fruit.

    Makes: 1 apple cake

    • 100g dairy free spread
    • 100g caster sugar
    • 4 eating apples - peeled, cored and grated
    • 200g self-raising flour
    • 100g dried fruit
    • 1 teaspoon ground cinnamon or mixed spice
    • 2 to 3 tablespoons water
    • 2 teaspoons demerara sugar

    1. Pre-heat oven to 180 C / Fan 160 C / Gas 4.
    2. Cream the spread and caster sugar. Mix in the remaining ingredients (except the demerara sugar), adding just enough water to make a thick cake mixture. Spoon into a greased 20x15cm (8x6 in) tin and flatten with a spatula or spoon.
    3. Bake for 30 to 35 minutes or until golden brown and firm to the touch. Sprinkle with some demerara sugar and extra cinnamon while warm. Cool in the tin and cut into slices before turning out.

    Easy to follow and tastes yummy. I added extra spice simply because we like it that way and used a splash of lemon juice in the water.  -  11 Sep 2014


    First attempt at vegan cookery as new work colleague otherwise misses out on 'Foodie Friday'! Really easy recipe - didn't expect it to rise too much and that is the situation but it's surprisingly light and really very tasty!  -  27 Aug 2015


    Really easy and delicious, added dark chocolate chunks and lemon juice (found I needed more water too) and emitted the demerara sugar, even my non-vegan family loved it!  -  17 Oct 2014
