Simple pork medallion with creamy chilli sauce

    This just a quick and easy dinner I came up with ingredients I had in fridge with pork medallions and using soft cheese to make the sauce I think tastes really nice. I made this just for one and never really measure as I cook but can be adapted easy - no exact measures necessary. Not the best photo but was not planning on writing up a recipe

    Serves: 1 

    • 1 pork medallion
    • oil for frying
    • 1 small red chilli
    • 1 to 3 chopped jalapenos from jar
    • 1/2 small onion, chopped
    • 1/4 yellow pepper, chopped
    • 1/4 red pepper, chopped
    • 2 tablespoons soft cheese
    • 1 tablespoon milk

    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Pan fry the pork medallion first in a little oil till almost cooked through then place aside on plate.
    2. Add the garlic, chillies, onion and peppers to the pan and cook for few minutes first, till softened. Add the soft cheese and milk. You can also add 1 tablespoon of juice from the jarred jalapenos for an extra kick.
    3. Once all mixed together add the pork medallion back to pan to warm through with sauce. Served mine with roasted salt and pepper sweet potatoes, green beans and a flat mushroom. Enjoy!!!

    Made a sort of version of this, with what I had, Main difference was I had about half the cheese and I didn't have the Jalepenos, and used a pork chop, we both loved it, I used about half a chili that the rain had got to in the garden, I would double that next time, oh and I threw in some sage with the milk and cheese, and doubled the peppers and added garlic!  -  14 Feb 2018
