Vegan scones

    30 min

This is a healthier and simple version of a classic scone recipe. It is completely vegan! The dried fruit is not optional as you need it to increase sweetness and moisture. Try anything from raisins and sultanas to mango and cranberries.

    1. Preheat oven to 180 C / Gas 4. Grease a baking tray or line with parchment.
    2. Mix flour, salt and soya butter and rub together until they resemble breadcrumbs. Stir in sugar.

How much fruit do you put in???  -  04 Jul 2014

Just made these scones an hour ago and they turned out great. Light with a firm almost crispy top. Very fluffy in centre and delicious. I used sultanas. My scone cutter was quite big so only got 8 from this recipe. Will definitely have this as a favourite recipe.  -  25 Oct 2013

Absolutely delicious! (I added 7g of flax seed to give it more protein.)  -  24 Feb 2018
