Extremely tasty peanut butter cookies

    I have trialed lots of peanut butter cookie recipes since I became addicted to them while I was on holiday in St Lucia. Finally, I emailed the hotel and they kindly gave me the recipe! This is converted to Imperial measures and scaled down to family sized proportions. I hope you enjoy them as much as I do.

    Makes: 72 cookies

    • 225g (8 oz) unsalted butter
    • 225g (8 oz) light soft brown sugar
    • 110g (4 oz) caster sugar
    • 1 teaspoon vanilla extract
    • 2 large eggs
    • 280g (10 oz) smooth peanut butter
    • 450g (1 lb) plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 150g (5 oz) salted peanuts

    1. Set oven to 140 C / Gas 2. Line a baking tray with baking parchment.
    2. Cream butter and sugars till light and creamy. Beat in the vanilla, then the eggs one at a time. Beat in the peanut butter.
    3. Stir the bicarbonate of soda into the flour and gradually mix into the creamed butter and sugar until well mixed and forming a dough. Mix in about 1/4 of the peanuts.
    4. Roll the dough into small walnut-sized balls and then roll in the peanuts. Place on baking tray, and do not flatten.
    5. Bake in preheated oven for 20 minutes, or until lightly golden. The cookies will appear slightly cracked and may seem a little soft.
    6. Allow to cool for at least 10 minutes on the tray, during which time they will crisp up. Serve dusted with icing sugar (optional).
