Broad bean and peach salad

    This salad is packed with goodness...broad beans, mangetout, fresh sweet peaches and lettuce are drizzled with a zesty salad dressing and served with a generous dollop of cottage cheese. Flaked almonds add some crunch or you can serve with granary bread for a well-balanced lunch.

    • 250g frozen broad beans
    • 170g mangetout, halved
    • 100g rocket
    • 45g lamb's lettuce
    • 4 ripe peaches, stoned and thinly sliced
    • 450g cottage cheese
    • 4 tbsp toasted flaked almonds
    • cayenne pepper
    • sprigs of fresh dill to garnish
    • Honey mustard dressing
    • 2 tablespoons extra virgin olive oil
    • grated zest and juice of 1 lemon
    • 1 teaspoon wholegrain or Dijon mustard
    • 2 teaspoons clear honey
    • 2 tablespoons freshly chopped dill
    • salt and pepper

    1. Plunge the broad beans into a saucepan of boiling water and cook for 4 minutes. Add the mangetout and cook for 1 more minute. Drain the beans and mangetout in a sieve, and refresh under cold running water to keep their fresh green colour.
    2. To make the dressing: Place the oil, lemon zest and juice, mustard, honey, chopped dill, and salt and pepper to taste in a mixing bowl. Whisk well.
    3. Add the mangetout, broad beans, rocket leaves and lettuce; toss to coat with the dressing.
    4. Divide the dressed vegetables among 4 serving plates. Scatter over the peach slices and top with the cottage cheese. Sprinkle with the flaked almonds and a little cayenne pepper. Garnish with dill sprigs and serve.

    Some more ideas

    For the dressing, use the grated zest and juice of 2 limes instead of lemon, and 3 tbsp chopped fresh coriander instead of dill. Finish with 30g roughly chopped toasted hazelnuts instead of almonds. To reduce the fat content, use low-fat cottage cheese. It contains 1.4 g of fat and 78 kcal per 100 g (3½ oz), whereas the same weight of standard cottage cheese contains 3.9 g of fat and 98 kcal.

    Plus points

    In addition to protein and calcium, cottage cheese provides useful amounts of vitamins B2 and B12. Broad beans are high in soluble fibre, which helps to reduce blood cholesterol levels. Fresh peaches are a good source of vitamin C and provide some beta-carotene.
