Blackcurrant syrup

    It may sound a little odd, but I have always mixed this blackcurrant syrup in milk for my daughter and she loves it! It is the perfect little treat and tastes quite delicious. Easy to make and easy to store, enjoy summer blackcurrants in a whole new way.

    Makes: 1 litre cordial

    • 900g blackcurrants
    • 450g caster sugar
    • 500ml water
    • juice of 2 lemons

    1. Wash the blackcurrants and remove any green stems, as this will cause bitterness.
    2. In a large preserving pan, combine the blackcurrants with the water, sugar and lemons and cook very gently over a low heat for 2 hours.
    3. Suspend in a jelly bag over a pan and allow to drip overnight.
    4. The next day, skim and pour into sterilised bottles and seal immediately. Store in the fridge until needed.


    To drink, dilute this cordial to taste (like you would with Ribena) with sparkling water or milk.
