About this recipe: Gorgeous little pancakes chock-a-block with apples. These are delicious for breakfast or a sweet treat anytime. Serve plain dusted with icing sugar, or try with cinnamon whipped cream or ice cream for an indulgent twist.


Serves: 4 

  • 250g plain flour
  • 1 tablespoon caster sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon bicarbonate of soda
  • 1 pinch salt
  • 500ml milk
  • 2 eggs
  • 2 large apples - peeled, cored and chopped
  • oil for frying
  • icing sugar for dusting (optional)

  1. Combine the dry ingredients in a large mixing bowl. Add the milk and eggs and beat well with an electric whisk till lump-free and the consistency of thick cream. Mix in the chopped apples with a spoon.
  2. Heat a generous drizzle of oil in a frying pan over medium heat. Add ladlefuls of the pancake batter and fry till golden, then flip. Serve warm dusted with icing sugar.
