Combine the dry ingredients in a large mixing bowl. Add the milk and eggs and beat well with an electric whisk till lump-free and the consistency of thick cream. Mix in the chopped apples with a spoon.
Heat a generous drizzle of oil in a frying pan over medium heat. Add ladlefuls of the pancake batter and fry till golden, then flip. Serve warm dusted with icing sugar.
