    This simple but delicious cranberry jam is a great way to keep your jam making spirits up during the winter months. This flavourful jam is fantastic with a creamy Brie and roasted figs - it might sound a little strange, but this is a wonderful combination of flavours and textures.

    Makes: 4 jars cranberry jam

    • 1.35kg cranberries
    • 300ml water
    • 1.35kg caster sugar

    1. Rinse the cranberries and remove any stalks. In a large preserving pan, combine the cranberries with the water and cook gently over a low heat for 90 minutes.
    2. Add the sugar and bring the jam to the boil. Begin testing for the setting point by dropping a small amount of jam onto a cold plate. If you push it with your finger and it wrinkles, it is ready.
    3. Transfer to sterilised jars and cover immediately. Leave undisturbed in a cool, dark place for 24 hours.
