Simple bruschetta

    Bruschetta is the perfect year round starter. Packed with flavour, it is so simple to make and devour.

    Serves: 6 

    • 1 baguette
    • 1 to 2 whole garlic cloves
    • 4 to 6 plum or vine tomatoes, thinly sliced or chopped
    • 1 handful fresh basil leaves, torn
    • salt and freshly ground black pepper
    • grated Parmesan cheese (optional)

    1. Slice the baguette in half lengthways, then into around 10cm (4 in) lengths. Toast pieces under the grill till golden, then immediately rub toasted bread with garlic.
    2. Cover the slices with tomato and season with salt and pepper. Sprinkle over the basil. Serve as is, or with a sprinkling of Parmesan over top.
