About this recipe:
Bruschetta is the perfect year round starter. Packed with flavour, it is so simple to make and devour.
1 to 2 whole garlic cloves
4 to 6 plum or vine tomatoes, thinly sliced or chopped
1 handful fresh basil leaves, torn
salt and freshly ground black pepper
grated Parmesan cheese (optional)
- Slice the baguette in half lengthways, then into around 10cm (4 in) lengths. Toast pieces under the grill till golden, then immediately rub toasted bread with garlic.
- Cover the slices with tomato and season with salt and pepper. Sprinkle over the basil. Serve as is, or with a sprinkling of Parmesan over top.
