Chinese fried rice

    Forget all the other Chinese fried rice recipes you have tried! You will only need this recipe. It took a long time of trial and error to get this recipe. Follow the instructions to the letter and I don't think you will need to look anywhere else for that take-away fried rice you are looking for.

    • 1 tablespoon Chinese oil (see footnote)
    • 1 egg, beaten
    • 1/2 small onion, diced
    • 1 cupful of cold pre-cooked long grain rice
    • 1 tablespoon frozen peas, defrosted
    • 1 teaspoon dark soy sauce
    • 1 teaspoon light soy sauce
    • 1/4 teaspoon salt
    • 1/4 teaspoon sugar
    • 1/4 teaspoon MSG
    • 1 small pinch white pepper
    • 1 teaspoon sesame oil

    1. Add the Chinese oil (or vegetable oil) to a hot wok. When oil just starts to smoke, add the egg and scramble. Add the onion to the egg and stir-fry for about 30 seconds.
    2. Add the rice to the egg and onion and stir-fry for about 1 or 2 minutes. Add the peas and stir fry another 30 seconds.
    3. Add the light and dark soy sauce, salt, sugar, MSG and white pepper. Stir fry for 30 seconds, then add the sesame oil and stir through. Serve straightaway.

    MSG, or Monosodium Glutamate, is available in some Chinese shops or can be purchased online.

    I didn't adapt this recipe at all. Decided I was fed up paying for take away so found this recipe. It tastes bloomin' marvellous, the hubby and the kids said it tasted better than our local take away :-)  -  23 Sep 2013
