Easy one-banana banana bread

This banana bread was perfect for me to make when I only had one banana left! The crispy topping is delicious. It was easy to make and yummy to eat!

Ingredients
Makes: 1 banana loaf
- 125g self-raising flour
- 100g caster sugar
- 1/2 teaspoon salt
- 110g butter, melted
- 75ml buttermilk
- 1 ripe banana, mashed
- 1 egg, lightly beaten
- For the topping
- 1 tablespoon plain flour
- 1 tablespoon cold butter
- 1 tablespoon soft brown sugar
- 1/4 teaspoon ground cinnamon
- 1 pinch salt

- Preheat oven to 150 C / Gas 2. Some would butter their loaf tin now, but I never butter my loaf tin.
- In a large bowl, whisk together flour, sugar and salt. Stir in the melted butter and the buttermilk. Add egg and stir until well combined. Add banana, stir well. Spread the mixture into the tin.
- Make the crumb topping by rubbing together butter, flour, brown sugar, cinnamon and salt. Distribute topping evenly over cake mixture in tin.
- Bake for 40 to 45 minutes, or until a cake tester comes out clean. Cool in the tin for 10 minutes, then allow to finish cooling on rack. Enjoy!
