Cajun chicken with tomato basil couscous

    A healthy filling meal store in the fridge for lunch the next day! Serves two, but could possibly serve three depending on portion sizes.

    • cooking spray, as needed
    • 2 chicken breasts, cut into chunks
    • 2 teaspoons Cajun seasoning
    • 1 packet Ainsley Harriott® sundried tomato and garlic couscous
    • 1/2 red pepper, chopped
    • 100g beansprouts
    • 100g green beans, sliced
    • 2 salad tomatoes, chopped
    • 1 1/2 tablespoons tomato puree
    • 1 tablespoon water
    • 1 teaspoon dried basil

    1. Spray a little cooking spray, like Frylight®, in a pan, and add chicken when heated. Add half of the Cajun seasoning and cook and stir chicken till browned.
    2. Prepare the couscous according to the packet directions.
    3. Add the veg to the chicken. Cook and stir till veg has softened.
    4. Add couscous to pan along with the tomato puree, water, basil and remaining Cajun seasoning. Stir all together until covered.
    5. Leave to cook for a further 5 minutes, stirring occasionally. Serve and enjoy!


    If you prefer a little bit more sauce, you can add a bit more water and tomato puree but I found that the dish was fine without.
