San Francisco dogs

    Just created my own take on a San Francisco hot dog. Toasted buns, bacon wrapped hot dogs, diced tomato and my 'cisco slaw' with shredded iceberg lettuce, basil, shallot, toasted fennel, dill pickles and mayo.

    Serves: 4 

    • 4 rashers smoked streaky bacon
    • 4 good quality hot dogs
    • oil for frying
    • 4 hot dog buns
    • 2 medium vine ripened tomatoes, finely diced
    • 'Cisco slaw
    • 4 heaped tablespoons finely shredded iceberg lettuce
    • 10 to 12 basil leaves, rolled and finely sliced
    • 2 small shallots, very finely diced
    • 3 whole dill pickles, finely chopped
    • 4 to 5 heaped tablespoons mayonnaise
    • 1/4 teaspoon toasted fennel seeds, crushed

    1. Make the slaw by mixing all the ingredients together and set aside.
    2. Wrap a rasher of streaky bacon around each hot dog. Heat a frying pan with a tiny amount of oil and pan fry the hot dogs until cooked through and the bacon just starting to slightly crisp.
    3. Assemble the hot dog with bacon wrapped hot dog first, tomatoes and then the slaw. Delish!
