Nan's famous lamb with a difference

    My nan used to make this delicious meal with leftovers. It is now one of our favourites. Lamb chops can be used as an alternative to lamb shoulder.

    Ingredients
    Serves: 4 

    • 1/2 shoulder of lamb, precooked and sliced
    • 1 large onion, sliced
    • oil or butter for frying
    • 1 (400g) tin chopped tomatoes
    • 100g grated cheese
    • fresh breadcrumbs for topping

    Method
    Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

    1. Place the slices of lamb in bottom of ovenproof dish.
    2. Gently fry onions. Lay some on lamb. Add a layer of chopped tomatoes, then add a layer of cheese. Continue with these layers, finishing with cheese and then breadcrumbs.
    3. Bake in a preheated 180 C / Gas 4 oven for 45 minutes. Enjoy!

    Tip

    I serve with jacket potatoes and peas. New potatoes go well too.

    A very simple dish with good results (all plates were emptied!) The adding of a tin of chopped tomatoes does make the dish a bit sweet so I would recommend seasoning before baking (something I never do nowadays preferring to season to taste once served) Thanks to Nan!!!  -  17 Dec 2013
