About this recipe:This delightful apple cake is perfect for afternoon tea or a picnic. Light, moist and full of flavour, this cake is just heavenly with some whipped cream or a little jam. This cake also freezes well, so good to have on hand in case of last minute visitors.
Makes: 1 apple cake
255g (8 oz) self raising flour
1 pinch salt
2 teaspoons mixed spice
1 pinch ground cinnamon
255g (9 oz) soft brown muscovado sugar
200ml (8 fl oz) vegetable oil
300g (11 oz) apples - peeled, cored and diced
55g (2 oz) sultanas

Preheat the oven to 180 C / Gas 4. Grease a 30x20cm (12x8 in) cake tin or line with baking parchment.
Sieve the flour, salt and spices into a bowl and mix in the sugar. Make a well in the centre of the dry ingredients and add the eggs and the oil. Mix until smooth then add the apples and sultanas. Pour the cake mixture into the prepared cake tin.
Bake in the oven for 25 to 30 minutes until a skewer inserted into the centre comes out clean. Leave to cool completely before turning out to serve.
I made this cake today. I cooked it in 2 x 1lb loaf tins (easier to fit a slice in a lunchbox and easier to fit in the freezer). Next time I make it I will increase the amount of sultanas. - 16 Sep 2013
