About this recipe:These delightful honey and lemon balm biscuits are just wonderful at tea time and are usually a staple in our household. Tried and tested many times over, these biscuits are fantastic with fresh lemon balm from the garden and are also excellent with lavender in place of the lemon balm, should you fancy a change.
Makes: 24 biscuits
225g plain flour
3 teaspoons baking powder
1 tablespoon milk
2 teaspoons lemon juice
4 sprigs fresh lemon balm, finely chopped

Preheat the oven to 180 C / Gas 4. Grease a baking tray or line with baking parchment.
In a large bowl, cream together the butter and honey. Add the eggs and beat well after each addition. Sift the flour and the baking powder into the butter mixture then add the milk, lemon juice and lemon balm. Stir well to combine. Drop tablespoon-sized mounds onto the prepared baking tray. Allow several centimetres between each biscuit.
Bake for 8 to 10 minutes until the biscuits are golden brown. Remove and allow to cool on a cooling rack.
