Sticky apricot flapjacks

    These sticky apricot flapjacks, inspired by the Scottish favourite, will be an absolute hit at your next gathering. The apricot jam lifts the flapjack into a whole new realm and provides a wonderful fruity flavour against the sweet hearty texture of the oats. Easy for picnics, parties and lunchboxes.

    Serves: 12 

    • 175g butter
    • 150g caster sugar
    • 5 tablespoons golden syrup
    • 450g rolled oats
    • 340g apricot jam

    1. Preheat the oven to 180 C / Gas 4. Line a 30x20cm baking tray with greased tin foil.
    2. In a saucepan over a medium heat, melt the butter and add the sugar and syrup. Stir in the oats and mix until well coated.
    3. Press half of the mixture into the prepared baking tray then spread thickly with apricot jam. Press the remainder of the oats over the top and press down.
    4. Bake for 30 minutes in the preheated oven until golden brown. Remove from the oven and leave the flapjacks to cool in the tin.
    5. When fully cooled, turn out onto a bread board and leave to cool completely. Slice and serve.
