    I am looking at ways of getting away from the main food chain so decided to have a go at making butter. I had a tub of Elmlea® double cream in my fridge and took it from there.

    Makes: 1 block butter

    • 1 tub double cream
    • salt, to taste

    1. Place your double cream in a bowl and whisk on a high setting for approximately 10 minutes or until the mixture resembles scrambled eggs.
    2. Place the mixture into a muslin cloth (I balanced mine over a jug) then squeeze the "butter milk" out and leave to stand for about an hour.
    3. Place the butter into a bowl and add your salt then cream together until blended. You can use other ingredients at this stage to spice, it's up to you.
    4. Wrap and store in the fridge.


    I used Himalayan salt for this recipe.
