Gluten free coconut mounds

About this recipe: Very easy and fast recipe - fun for children to make! The number of servings depends on how big you make the mounds!

Serves: 10 

  • 200g desiccated coconut
  • 100g caster sugar
  • 1 large egg
  • 1 tablespoon cornflour
  • glace cherry halves, to decorate

  1. Set the oven to 180 C / 160 C fan / Gas 4 and line a baking tray with parchment.
  2. Put all ingredients except cherries in a large bowl, and mix thoroughly until combined.
  3. Using hand, or an eggcup (I use the cup from an egg poacher) mould the mixture into mounds and place an inch or two apart on the baking tray. Top with cherries.
  4. Bake for 15 to 20 minutes until lightly browned.
  5. Remove from the oven, and leave on the tray for 10 minutes, then finish cooling on a rack.


When cold, they will keep in a tin for a long time! I sometimes add pink food colouring to the mixture for pink mounds.

Gluten free tip

Ensure the cornflour is 100% gluten free by reading label before using.
