Spicy Cuban bloody mary prawn cocktail

    Serves: 4 

    • 225g prawns, shelled
    • 1 teaspoon adobo with habanero
    • 15g butter
    • 2 measures vodka
    • 1/2 head lettuce, shredded
    • 1/2 avocado, sliced
    • 450ml cold tomato juice or V8®
    • 2 splashes Worcestershire sauce
    • 1 Scotch bonnet chilli, sliced
    • 1/4 teaspoon celery seed
    • 4 drops Tabasco
    • 1 stick celery, quartered
    • 1 lemon, sliced

    1. Coat the prawns in the adobo with habanero. Heat the butter in a frying pan, add the prawns and 1 measure of vodka. Cook for 5 to 6 minutes, till prawns are pink. Remove from heat.
    2. Place lettuce at the bottom of a serving glass. Top with some prawns, then a layer of avocado, then more prawns, then more avocado.
    3. Mix cold tomato juice, remaining jigger of vodka, Worcestershire sauce, sliced chilli, celery seed and Tabasco. Pour the mixture into your glasses. Decorate with a celery stick and lemon slices.


    Serves 2 big cocktails or 4 smallish ones.
