Sangchu geotjeori (Korean lettuce salad)

    A traditional Korean lettuce salad, sangchu geotjeori has a wonderful flavour combination. The salad is a balanced mixture of sweet and salty and just perfect as part of a larger Korean meal. Serve with all the usual favourites like seafood pancake, kimchee and spicy pork.

    Serves: 6 

    • 1 teaspoon minced garlic
    • 1 1/2 teaspoons rice vinegar
    • 4 teaspoons soy sauce
    • 1 teaspoon brown sugar
    • 1 teaspoon red chilli flakes
    • 1 tablespoon sesame oil
    • 1 teaspoon sesame seeds
    • 250g chopped iceberg lettuce
    • 250g spinach
    • 4 to 6 spring onions, chopped
    • 1/2 cucumber, sliced

    1. In a bowl, combine the garlic and rice vinegar and let it sit for 5 minutes. Add the soy sauce, sugar, chilli flakes, sesame oil and sesame seeds. Whisk to mix well.
    2. In a large bowl, combine the lettuce, spinach, spring onions and cucumber. Pour the dressing over the leaves and toss well to coat. Serve the same day.
