In a casserole dish, layer half of the sliced onion sprinkled with curry powder, then layer half the chopped tomatoes sprinkled with salt. Repeat.
Pan fry pork chops just to colour, and place on top of your layers of onion and tomato. Cover.
Bake in the preheated oven for 1 to 2 hours. Check frequently after 60 minutes, as you do not want the chops to become dry. Remove when the chops are no longer pink in the centre and the juices run clear.
Goes really well with jacket potatoes which you can pop in oven while casserole is cooking.
