    About this recipe: I don't know why my mother called this dish "cabin casserole", but it's fabulously easy to make and twice as fabulous to eat.

    Serves: 2 

    • 2 large onions, sliced
    • curry powder, to taste
    • 2 tins chopped tomatoes
    • salt, to taste
    • 2 to 4 pork chops

    1. Preheat the oven to 160 C / Gas 2/3.
    2. In a casserole dish, layer half of the sliced onion sprinkled with curry powder, then layer half the chopped tomatoes sprinkled with salt. Repeat.
    3. Pan fry pork chops just to colour, and place on top of your layers of onion and tomato. Cover.
    4. Bake in the preheated oven for 1 to 2 hours. Check frequently after 60 minutes, as you do not want the chops to become dry. Remove when the chops are no longer pink in the centre and the juices run clear.


    Goes really well with jacket potatoes which you can pop in oven while casserole is cooking.
