Simple delicious lemon chicken

    An easy, 30 minute, two-step lemon chicken dish just perfect for a simple evening meal. Serve over rice.

    Serves: 2 

    • 4 chicken breast fillets
    • 4 tablespoons plain flour
    • 2 tablespoons butter
    • 1 onion, chopped
    • juice of 4 lemons
    • 360ml chicken stock, warmed

    1. Cut each chicken breast lengthways into two pieces. Dust chicken in the plain flour to coat.
    2. In a large pan, melt the butter and add the chopped onion. Add the chicken and brown on both sides until golden. Add the juice of 4 lemons to the chicken stock, stir, pour over chicken, then leave to simmer for 10 to 15 minutes until the chicken is no longer pink in the centre.
