In a large pan, melt the butter and add the chopped onion. Add the chicken and brown on both sides until golden. Add the juice of 4 lemons to the chicken stock, stir, pour over chicken, then leave to simmer for 10 to 15 minutes until the chicken is no longer pink in the centre.
