Cheese on toast with poached egg

This is a special way to make cheese on toast and this recipe adds a poached egg on top. Great as a light lunch or easy dinner.

Ingredients
Serves: 1
- 1 teaspoon white wine vinegar
- 1 egg
- 2 slices bread
- pepper, to taste
- Marmite®, to taste
- 2 to 4 slices cheese
- 1 handful rocket leaves

- Add the white wine vinegar to a saucepan of boiling water. Remove from the heat, swirl the water vigorously and crack an egg into the centre. Cover for 1 to 2 minutes.
- Toast the bread, then line a tray with tin foil and put your toast on the tray. Spread Marmite® on the toast then place cheese on the top.
- Place the toast under the grill and wait for the cheese to bubble. Remove from grill and put the poached egg on the toast when it is cooked and place rocket around it.

This was delicious and very easy to make. Can't get Marmite where I live so used a slice of prosciutto instead. yummm. - 04 Jan 2015
