Beer, cheese and chive loaf

    This is a strong loaf which is good on its own with butter. I like to use Mackeson® stout and extra mature Cheddar cheese as they have good strong flavours.

    Makes: 1 beer, cheese and chive loaf

    • 1 sachet fast acting yeast
    • 250g strong white bread flour
    • 1/2 tablespoon caster sugar
    • 1 teaspoon salt
    • 15g butter
    • 160ml beer
    • chopped fresh chives
    • 40g Cheddar cheese, grated

    1. Mix together the yeast, flour, sugar and salt. Rub in the butter then add the remaining ingredients, setting aside a little cheese for sprinkling on top, and mix to a dough.
    2. Put the dough onto a well floured surface and knead for 10 minutes. Shape the dough to fit a greased loaf tin and leave to prove in a warm place for about an hour, until doubled in size. Sprinkle the cheese you set aside on top.
    3. Preheat the oven to 220 C / Gas 8.
    4. Bake in a preheated oven for 15 to 20 minutes. If the loaf sounds hollow when tapped on the bottom, it is baked all the way through.
