Beer, cheese and chive loaf

About this recipe: This is a strong loaf which is good on its own with butter. I like to use Mackeson® stout and extra mature Cheddar cheese as they have good strong flavours.

  1. Mix together the yeast, flour, sugar and salt. Rub in the butter then add the remaining ingredients, setting aside a little cheese for sprinkling on top, and mix to a dough.
  2. Put the dough onto a well floured surface and knead for 10 minutes. Shape the dough to fit a greased loaf tin and leave to prove in a warm place for about an hour, until doubled in size. Sprinkle the cheese you set aside on top.
  3. Preheat the oven to 220 C / Gas 8.
  4. Bake in a preheated oven for 15 to 20 minutes. If the loaf sounds hollow when tapped on the bottom, it is baked all the way through.
