Melon and prawn cocktail

    This refreshing melon and prawn starter is perfect on a warm summer evening as an accompaniment to an outdoor meal or as a light lunch. Serve the melon and prawn mixture as you would a prawn cocktail, with lettuce and a slice of lemon.

    Serves: 10 

    • 4 small ripe melons, chilled
    • 900g fresh prawns
    • 600ml double cream, whipped
    • juice of 2 lemons
    • 4 tablespoons mayonnaise
    • 2 to 4 tablespoons tomato ketchup
    • salt and pepper, to taste
    • 1 pinch paprika
    • chopped fresh chives, to taste
    • salt and pepper, to taste

    1. Cut the melons in half and remove the seeds. Scoop out the flesh and chop into cubes. Reserve the melon shells and set aside.
    2. In a large bowl, combine the melon and the prawns. Add the whipped cream, lemon juice, mayonnaise, ketchup and seasoning. Mix well. Spoon the mixture back into the melon shells, sprinkle with chives, season and serve immediately.


    For this recipe, I like to use a nice ripe cantaloupe melon as it seems to have the best flavour and texture for this dish.

    This was great. I fancied it up a bit and actually kept the melon separate. I added chopped boiled egg to the prawn mixture - gawgeous! :-)  -  15 Jan 2015
