This refreshing melon and prawn starter is perfect on a warm summer evening as an accompaniment to an outdoor meal or as a light lunch. Serve the melon and prawn mixture as you would a prawn cocktail, with lettuce and a slice of lemon.
For this recipe, I like to use a nice ripe cantaloupe melon as it seems to have the best flavour and texture for this dish.
This was great. I fancied it up a bit and actually kept the melon separate. I added chopped boiled egg to the prawn mixture - gawgeous! :-) - 15 Jan 2015
