    About this recipe: This apple and rhubarb crumble is yummy and easy to make. Enjoy with a scoop ice cream or vanilla custard.

    Ingredients
    Makes: 1 apple rhubarb crumble

    • For the filling
    • 1 apple - peeled, cored and sliced
    • 8 stalks rhubarb, chopped
    • 2 to 3 teaspoons caster sugar
    • For the crumble
    • 100g plain flour
    • 125g caster sugar
    • 60g porridge oats
    • 60g butter

    Method

    1. Preheat the oven to 200 C / Gas 6.
    2. For the filling:

    3. In a saucepan, combine the apple, rhubarb and sugar. Stew the fruit over a medium heat for 10 to 15 minutes until soft, adding a little water if necessary.

    5. Combine the crumble ingredients in a bowl and rub together with your fingers.
    6. When the rhubarb and apple mixture is soft, transfer to a round baking dish and sprinkle the crumble mixture evenly on top.
    7. Bake in the preheated oven for 45 minutes until the crumble is golden brown.
