About this recipe: This is an easy recipe for a spiced butterscotch sauce. Rich, creamy and perfect on almost every kind of ice cream, this butterscotch sauce is a winner all year round and especially at Christmas.


Serves: 8 

  • 140g soft brown sugar
  • 140g golden syrup
  • 120ml double cream
  • 3 to 4 drops vanilla extract
  • 1 pinch ground cinnamon
  • 1 pinch ground nutmeg

  1. In a saucepan over a low to medium heat, combine the sugar and syrup until the sugar has caramelised. Remove from the heat and stir in the cream, vanilla and spices. Stir for a few minutes until thick and glossy. Serve hot or cold.


This sauce keeps well for several weeks in the fridge.
