Luxury Cumberland sauce

    This is a delightful recipe for a luxury Cumberland sauce just perfect for game dishes, duck and rustic sausages.

    Serves: 8 

    • 250g redcurrant jelly
    • 1 tablespoon Dijon mustard
    • 150ml ruby port
    • zest and juice of 1 lemon
    • zest and juice of 1/2 orange
    • 1 teaspoon finely chopped stem ginger
    • 1 pinch minced fresh rosemary
    • 1 teaspoon cornflour

    1. Combine all of the ingredients in a saucepan and heat gently for 8 minutes until the sauce thickens. Allow to cool for 1 hour before serving.
