Easy mango chicken

    This recipe is so simple and tastes delicious. I have served it on loads of occasions and everyone always wants a second helping. The quantities of the ingredients can be varied easily depending on how many you're feeding. For best results, use the best mango chutney you can find.

    Serves: 4 

    • 1 onion, finely chopped
    • olive oil, to taste
    • 2 to 4 chicken breasts
    • 1 tub crème fraîche
    • 2 to 4 tablespoons good quality mango chutney

    1. Gently fry the chopped onion in a little olive oil. Cut the chicken into bite-size pieces and add to the pan. Fry until cooked through, but not browned. Add the crème fraîche and if you're not sure how much sauce it will make, add it a tablespoon at a time, but you will need at least half a small tub. Add at least 2 tablespoons of mango chutney and stir everything together thoroughly. Heat until the sauce just starts to bubble. Check there's sufficient mango flavour and serve.


    This also works well with sliced mushrooms, added at the chicken stage, and equally well without the onion. It's good served on mashed potato or rice with some green vegetables.
