Curried scrambled egg

    Simple curried egg recipe with onion and potato. Perfect for any time of the day. Enjoy with white bread.

    Serves: 1 

    • 2 tablespoons vegetable oil or butter
    • 2 to 3 eggs, beaten
    • 1 small onion, finely chopped
    • 1/4 teaspoon chilli powder
    • 1/4 teaspoon salt
    • 1 small potato, finely chopped
    • 1 green chilli, finely chopped
    • 120ml water

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Place small frying pan onto medium heat, allow oil to heat. Add chopped onion and 3 tablespoons of water. Once onions are soft add chilli powder and salt, crush together with fork. Add chopped potato, chilli and rest of water. When water has gone add the eggs. Stir until eggs are cooked to desired consistency.

    This method using water intrigued me. The whole thing comes together easily and as written. I used butter but ended up adding a bit of oil. I used two extra large eggs and served it with fresh corn tortillas. Delicious. Thank you for the recipe.  -  14 Apr 2017
