Stuffed cabbage rolls

    Stuffed cabbage rolls is a favourite dish in many Russian homes. Cabbage leaves are precooked and stuffed with a minced meat and rice filling. You can substitute minced turkey for a lighter version.

    Serves: 8 

    • 1 cabbage
    • 140g rice
    • 3 tablespoons oil
    • 2 onions, chopped
    • 500g minced beef
    • 300g minced pork
    • salt and pepper to taste
    • 3 carrots, grated
    • 3 tablespoons tomato puree
    • 2 tablespoons soured cream
    • 225ml water

    1. Make slits at the base of the cabbage or cut out the entire core. Fill a large saucepan about 1/3 full of water. Bring to the boil, then add the whole cabbage to the pan. Cook for 15 to 20 minutes, turning occasionally. Drain and cool, then cut the leaves off the cabbage one by one, trying to keep them intact. Cut out the centre of the large leaves, where it is too tough or thick.
    2. Cook rice according to packet instructions.
    3. Heat 2 tbsp of the oil in a frying pan, add one of the chopped onions and cook till soft.
    4. In a large mixing bowl, combine the cooked onions with the mince, rice, salt and pepper. Mix well with your hands till combined.
    5. Place 1 tablespoon of meat filling at the base of a cabbage leaf. Fold over like an envelope, then roll to the top edge of the leaf. Repeat with remaining cabbage and filling.
    6. Heat remaining oil and fry cabbage rolls a few minutes on each side, till browned. Transfer to a casserole dish along with the onion and carrot sprinkled on top.
    7. Mix soured cream and tomato puree. Whisk in water, then season with salt (you can add your favourite dried herbs at this point, if desired). Pour sauce over the cabbage rolls.
    8. Cover and cook over a medium low heat for 45 minutes.

    Most of my childhood memory includes getting yelled at by my mother, PunamPaul. Come and eat your veggies; but I used to pay no heed to it. However as time passes, most of us come around to eating vegetables as we are aware of the countless benefits they have for our health. . This cabbage recipe when I tried at home was not really appreciated by my family but I thought it was really yummy.     I used all ground beef for this recipe and added a beaten egg to the meat mixture. We love sauerkraut, so I browned some in the same pan I used to brown the cabbage rolls, then added it to the pot with the rolls. Delicious!  -  26 Jan 2019  (Review from Allrecipes US | Canada)
