    About this recipe: This paleo friendly blueberry and lavender ice cream is incredibly vibrant and tastes delicious. A wonderful healthy alternative to regular ice cream, especially during the summer months when you can gather your own lavender and blueberries.

    Ingredients
    Serves: 4 

    • For the jam
    • 140g fresh blueberries
    • 2 tablespoons raw honey
    • 1 teaspoon vanilla extract
    • 1 tablespoon lavender buds, finely ground
    • 1 pinch salt
    • For the ice cream
    • 1 (400ml) tin coconut milk
    • 1 tablespoon raw honey
    • 1 pinch ground nutmeg

    Method

      For the jam:

    1. Wash and drain the blueberries, removing any stalks. Combine the blueberries with the honey in a saucepan over a medium heat and allow to simmer and thicken. Add the vanilla, lavender, salt and mix well. Continue to simmer over a low heat for 45 minutes until the fruit has almost completely broken down and resembles a chunky jam. Remove from the heat and transfer to a bowl to chill in the fridge.
    2. For the ice cream:

    3. Meanwhile, whisk the coconut milk, honey and nutmeg together and pour into an ice cream maker. Churn in the ice cream maker until thickened, then add the chilled jam. Churn until the jam is well mixed into the ice cream. Serve frozen.

    Tip

    Not all the ingredients above may belong on your paleo table. Substitute as needed for own personal diet.
