Simple but tasty coleslaw

    This recipe is really easy to make and much better than shop bought coleslaw. You can make it and keep it in the fridge for a couple of days afterwards. It goes down really well at a barbecue.

    Serves: 8 

    • 3 medium carrots, grated
    • 1 red onion, grated
    • 1/2 white cabbage, grated
    • 2 to 4 tablespoons mayonnaise
    • 1 teaspoon lemon zest
    • salt and pepper, to taste
    • basil leaves, to taste

    1. Combine the carrots, onion and cabbage in a large bowl. Add in the mayonnaise and mix until all ingredients come together. Mix in the lemon zest, salt and pepper. To finish off, add a few torn basil leaves.


    Add mayonnaise to taste or according to the range provided.
