Chorizo puff pastry bites

    These tasty bites are ideal as a tasty snack and can also be served as a pre dinner appetiser or as part of a canapé selection.

    Serves: 16 

    • 320g puff pastry
    • 100g chorizo
    • plain flour, for dusting
    • 1 egg yolk

    1. Preheat the oven to 180 C / Gas 4. Grease an oven proof baking tray.
    2. Cut the chorizo in to thin rectangular sticks about 1cm wide and 7cm long.
    3. On a clean surface scatter some plain flour and roll out the puff pastry until it is an inch thick.
    4. Then cut the pastry in to long thin strips about 1cm wide and 23cm long.
    5. Using one pastry strip, wrap it around the chorizo a bit like a twister until the chorizo is fully covered with the pastry, if the pastry is a bit short it doesn't matter too much.
    6. Refrigerate the chorizo and puff pastry bites for roughly 10 to 20 minutes.
    7. Remove from the fridge and arrange on the prepared baking tray making sure they are not over crowded. Then brush with egg.
    8. Bake the pastry bites in the oven for abut 15 to 20 minutes or until golden brown. Transfer them to wire rack until completely cooled.
